The Restaurant Manager for Fine Dining at Accor is responsible for overseeing daily restaurant operations, ensuring exceptional guest satisfaction, and maintaining high standards of food quality and service. This role involves leading and developing the restaurant team, managing financial aspects like costs and revenue, and creating memorable dining experiences. The manager will also handle administrative tasks, coordinate with other departments, and support marketing efforts to enhance the restaurant's visibility and business.

Must Have

  • Minimum 3-5 years of experience in a fine dining leadership role
  • Excellent knowledge of food and wine pairings, fine dining service standards, and guest relations
  • Strong leadership, interpersonal, and communication skills
  • Proficient in restaurant management systems (Micros, POS, Opera)
  • Fluent in English

Job Description

Key Responsibilities:

Operational Excellence

  • Supervise the daily restaurant operations, ensuring smooth service and guest satisfaction at all times.
  • Maintain high standards of food quality, service, cleanliness, and ambiance in line with Fairmont brand standards.
  • Monitor guest feedback and implement corrective actions when necessary to ensure consistent guest satisfaction.
  • Coordinate with the culinary and bar teams to ensure menu consistency and timely service delivery.
  • Ensure compliance with all health, safety, and hygiene regulations.

Team Leadership & Development

  • Lead, train, and motivate the restaurant team to deliver personalized, anticipatory service.
  • Conduct daily briefings and regular training sessions to reinforce product knowledge and service excellence.
  • Evaluate staff performance, provide feedback, and support career development plans.
  • Promote teamwork and ensure open communication within the department.

Financial Management

  • Monitor and control operational costs while maximizing revenue and profitability.
  • Assist in creating budgets, forecasts, and P&L analysis for the restaurant.
  • Implement effective strategies to achieve financial and guest satisfaction targets.
  • Manage inventory, ordering, and cost control for beverages, linen, and supplies.

Guest Experience

  • Create memorable dining experiences through attention to detail, genuine hospitality, and personalized interactions.
  • Handle guest complaints or special requests promptly and professionally.
  • Build strong relationships with repeat and VIP guests to enhance loyalty.

Administration & Coordination

  • Prepare and analyze daily, weekly, and monthly reports on operations, revenue, and performance.
  • Coordinate with other departments (Kitchen, Events, Housekeeping, Front Office) to ensure seamless guest experiences.
  • Support marketing initiatives, promotions, and special events to drive restaurant visibility and business.

Qualifications

  • Previous experience in Michelin-starred restaurants or with Celebrity Chefs is required.
  • Degree or Diploma in Hotel Management / Hospitality / F&B Service.
  • Minimum of 3–5 years of experience in a fine dining or luxury restaurant in a leadership role.
  • Excellent knowledge of food and wine pairings, fine dining service standards, and guest relations.
  • Strong leadership, interpersonal, and communication skills.
  • Proficient in restaurant management systems (e.g., Micros, POS, and Opera).
  • Fluent in English (additional languages are an asset).
