Job Summary
Accor is seeking a Chocolate Chef (Chocolatier) for Swissôtel The Bosphorus, Istanbul. The role involves producing handmade chocolates, developing new products aligned with hotel themes, and performing precise tempering, molding, and decoration. The chef will collaborate with the pastry team, maintain standardized recipes, ensure quality control and hygiene, and support production planning. This full-time position requires a minimum of 10 years of experience in chocolate production, strong technical knowledge, creativity, and excellent organizational skills.
Must Have
- Produce handmade chocolates, pralines, truffles, chocolate bars, and other specialty items.
- Develop chocolate products aligned with hotel concept and seasonal themes.
- Perform tempering, molding, filling, and decoration processes with precision.
- Collaborate with the pastry team on chocolate-based desserts and buffet items.
- Create and maintain standardized recipes and product consistency.
- Ensure quality control of raw materials and proper storage conditions.
- Comply with hygiene, food safety, and occupational health standards.
- Minimum 10 years of experience in chocolate production.
- Strong knowledge of chocolate tempering and different chocolate types.
- Ability to follow, create, and standardize recipes.
- Knowledge of food safety and hygiene standards (HACCP preferred).
- Basic English communication skills.
Good to Have
- Degree or certification in gastronomy or pastry arts.
- Experience in international hotels or fine-dining environments.
- Participation in professional chocolate or pastry workshops.

Job Description
- Produce handmade chocolates, pralines, truffles, chocolate bars, and other specialty items
- Develop chocolate products aligned with the hotel’s concept and seasonal themes
- Perform tempering, molding, filling, and decoration processes with precision
- Collaborate with the pastry team in the preparation of chocolate-based desserts and buffet items
- Create and maintain standardized recipes and product consistency
- Ensure quality control of raw materials and proper storage conditions
- Comply with hygiene, food safety, and occupational health standards at all times
- Support production planning and stock control
- Design customized chocolate products for special events, VIP guests, and seasonal occasions
- Provide technical support and training to team members when required
Qualifications
- Minimum 10 years of experience in chocolate production (preferably in hotels or boutique ateliers)
- Strong knowledge of chocolate tempering and different chocolate types
- High attention to detail and strong presentation skills
- Ability to follow, create, and standardize recipes
- Knowledge of food safety and hygiene standards (HACCP preferred)
- Creative and innovative mindset
- Strong time management and organizational skills
- Team player with good communication skills
- Ability to work in a fast-paced environment and flexible working hours
