Job Summary

As Restaurant Operations Director La Plage, reporting directly to the General Manager, you will be responsible for team management, organization, and the smooth running of services. Key responsibilities include ensuring optimal restaurant operation, maintaining equipment and premises, applying HACCP protocols, overseeing inventory, stock management, ratios, and profitability. You will organize and direct restaurant services, maintain quality standards, ensure smooth service flow from guest reception to departure, maintain excellent guest relations, and manage daily cash registers. You will also be responsible for updating sales materials, proposing product/service development, controlling costs, monitoring performance indicators, motivating, training, and supporting teams, transmitting client information, recruiting new staff, and mentoring learners.

Job Description

As Restaurant Operations Director La Plage, reporting directly to the General Manager, you will be responsible for team management, organization, and the smooth running of services.

Organizational:

  • Ensure the optimal functioning of the Restaurant.
  • Guarantee the maintenance of equipment, premises, as well as the knowledge and proper application of HACCP protocols by all members of your team.
  • Ensure the smooth running of inventories by ensuring results are in line with the objectives requested by the Restaurant Director and General Management.
  • Ensure the monitoring of stock management, ratios, and the profitability of the restaurant.

Service:

  • Organize and direct restaurant services.
  • Apply and maintain quality service standards.
  • Ensure the smooth running of service, participate in all operations from guest reception, service follow-up, payment, to departure.
  • Maintain excellent relations with guests, with confidentiality and discretion.
  • Control and report daily cash registers.

Development:

  • Keep sales materials up to date and clean.
  • Be proactive in proposing the development of products/services offered to customers to increase their satisfaction and loyalty.
  • Master all costs related to your service.
  • Monitor the performance indicators of your service (employee satisfaction, customer satisfaction, turnover, etc.).

Team Management:

  • Ensure team motivation.
  • Train and support your teams to foster their professional development.
  • Transmit information and instructions concerning our clients to all teams.
  • Recruit and integrate new employees in conjunction with the Restaurant Director and the Human Resources department.
  • Be a force for transmission to our apprentices in your service.

Qualifications

Required Degree / Knowledge:

  • Degree in catering required.
  • Mastery of HACCP hygiene rules.
  • Knowledge of luxury hotel industry.
  • Essential gastronomy culture.

Soft Skills / Behavioral Aptitudes:

  • Excellent interpersonal skills.
  • Sense of welcome and customer service.
  • Ability to manage time and priorities according to the imperatives of a hotel establishment.
  • Oral fluency.

  • Similar experience required.

  • Sales and communication skills.
  • Proficiency in Pack Office, Micros, and Opera.
  • Fluent English imperative (written and oral).
