The Chef Gaetano Trovato, trained in Europe by the best chefs, has returned to his native Tuscany to create a cuisine based on organic products, revisiting the genuine flavors of the Crete Senesi with a contemporary spirit. «Territory and Research» and «Contemporary Moments» are two suggestions for seasonal menus. The menu includes fresh pasta of the day, milk-fed veal raised on the hills of Siena, but also scampi, prawns and fish from the Tyrrhenian coast, a feast for the eyes and the palate. Experienced sommelier, Giovanni Trovato will guide you through a list of 600 vintage wines from Tuscany and other territories. The resource, within the 2 Michelin star restaurant and assisting the Chef de Rang, will be in charge of: helping with the mise en place at the table, helping to clear the table after each course, bringing food from the kitchen to the dining room, cleaning and keeping work areas clean, and rearranging the dining room.
