Join the Disneyland Resort's Culinary team as a Pastry professional. You will have the opportunity to use your pastry skills in a lively and innovative environment. Whether you are looking for an exquisite Signature Fine Dining Pastry environment at the Grand Californian Hotel & Spa or in an exciting, fast-paced production environment at the Central Bakery, magical opportunities await! Depending on the role, you may be responsible for formulating and preparing complex recipes, including bakers/pastry recipes and high-end specialty desserts for banquets and fine-dining restaurants, assisting Pastry/Chef Head Baker with cake decorating, knowing pastry techniques, scaling, mixing, proofing, baking, decorating, finishing, portioning and arranging food on serving dishes, ensuring portion control and plate presentation, cooking, mixing and/or seasoning ingredients when preparing bakery items, following recipe guidelines, maintaining kitchen safety and sanitation, including temperature requirements, judging food quality and production, understanding the impact of spoilage, assisting Chef in preparing items for Guests with special dietary needs, knowing and understanding tools, measurements, ingredients, equipment, small wares and cooking required for a bakery, cleaning kitchen equipment and practicing HACCP (Hazard Analysis and Critical Control Points) procedures.
Must have:
  • Passion for Pastry & Baking
  • Strong experience with cakes, plated desserts
  • Working in banquet and restaurant environments
  • Minimum 2 years of culinary experience
  • Ability to follow recipes in a mass volume environment
  • Multitasking and working in a fast-paced team environment
  • Excellent guest service skills
  • Strong listening skills and ability to take direction
Good to have:
  • Completed culinary education program or equivalent
  • Leadership experience
  • Bilingual

Responsibilities:

Pastry Line/Dinner Cook
  • Formulates and prepares complex recipes including bakers/pastry recipes and high-end specialty desserts for banquets and fine-dining restaurants
  • May assist Pastry/ Chef Head Baker with cake decorating
Pastry Cook/Baker
  • Knowledge of pastry techniques, scaling, mixing, proofing, baking, decorating, finishing
  • Portions and arranges food on serving dishes and responsible for portion control and plate presentation
  • May cook, mix and/or season ingredients when preparing bakery items (i.e. muffins, Danishes, cakes, restaurant items, banquet orders, ice cream or sorbet)
All Pastry Teams
  • Prepare products according to recipe guidelines
  • Knowledgeable of kitchen safety and sanitation including temperature requirements
  • Has good judgment of food quality and production, understands the impact of spoilage
  • Ability to assist Chef in preparing items for Guests with special dietary needs
  • Knowledge and understanding of tools, measurements, ingredients, equipment, small wares and cooking required for a bakery
  • Cleans kitchen equipment and practices HACCP (Hazard Analysis and Critical Control Points) procedures

Basic Qualifications:

  • You must be at least 18 years of age to be considered for this role
  • Passion for Pastry & Baking and delighting our Guests with food!
  • Strong experience with cakes, plated desserts and working in banquet and restaurant environments
  • Minimum 2 years of experience in culinary field, restaurant, or Culinary Degree and equivalent experience
  • Ability to follow and understand recipes in a mass volume environment
  • Multi task and work in a fast paced team environment
  • Demonstrates a desire to provide excellent guest service and be part of a team
  • Strong listening skills and ability to take direction

Preferred Qualifications:

  • Completed culinary education program or equivalent Leadership experience
  • Bilingual preferred

Additional Information:

SCHEDULE AVAILABILITY
Our Theme Parks and Resort Hotels operate 24 hours a day, 365 days a year and some shifts may start as early as 5:00am while some may end as late as 3:00am, 4:00am or 5:00am.
