Job Description

The Chief Steward at Fairmont Waterfront is responsible for leading the Stewarding team to support overall Food and Beverage and hotel operations. This role involves ensuring excellent service by maintaining high staff morale and team spirit, managing the Stewarding team through recruitment, coaching, and performance reviews, and controlling labor expenses through effective scheduling. The Chief Steward will supervise and assist a team of approximately 20 stewards, maintain accurate records of breakage and inventory, manage operational expenses, and source plateware and glassware samples. The position also requires coordination with F&B for operating par stocks, working with engineering to maintain kitchen equipment, and ensuring cleanliness standards are met. The role includes liaising with night cleaners, leading food safety audits, and ensuring staff are trained on chemical handling. Administrative duties such as banquet event orders, scheduling, and payroll are also part of the responsibilities, along with participating in the Sustainability Committee and ensuring compliance with food handling and sanitation standards.

Chief Steward

Summary of Responsibilities:

  • Reporting to the Executive Chef and leading the Stewarding team in support of the overall Food and Beverage and hotel operations.  
  • Ensure the delivery of excellent service by maintaining high staff morale and team spirit
  • Develops and maintains action plans related to the Employee Engagement Survey
  • Manage the Stewarding team through recruitment, coaching, performance reviews, development and recognition
  • Control labour expense by managing the team and scheduling the departments labour standards
  • Supervise and assist an experienced team of +/- 20 stewards to complete their daily responsibilities
  • Maintain accurate records and reports of breakage and inventory of Chinaware and Glassware
  • Conduct minimum of quarterly china, glass and silverware inventory with analysis
  • Manage operational expenses and purchases to budget and reforecast
  • Source plateware and glassware samples along with pricing and quality assessment
  • Coordinate with F&B in establishing operating par stocks
  • Work with engineering to create and maintain service schedules of all Kitchen and dishwashing equipment, taking action of any deficiencies
  • Ensure Stewarding and Kitchen areas are maintained to the highest cleanliness standards and cleaning schedules are followed internally and through third party  
  • Liaise with night cleaners to ensure efficiency and accountability
  • Take ownership to lead the EHC food safety audit and participate in regular internal audits and drive action plans
  • Ensure all staff are trained on chemical handling (GHS)
  • Conduct monthly communication meetings
  • Work closely with Banquets and outlets to ensure that all equipment needs are on hand and in good working condition.
  • Ensure all administrative duties for Stewarding are complete to include Banquet Event Orders, Scheduling, Payroll, etc
  • Actively participate in the Sustainability Committee, championing departmental specific initiatives in working towards sustainable operations
  • Ensure compliance with food handling and sanitation standards
  • al Lead on Health, Safety & Wellness policies and initiatives
  • Other duties as required

 

 

Qualifications

  • Proven leadership ability that supports an environment of employee growth and development, interdepartmental teamwork, and exceptional customer service
  • Previous management experience, ideally in Food & Beverage with operational knowledge of Stewarding
  • HACCP Audit experience an asset
  • Excellent interpersonal and communication skill, both written and verbal
  • Team player with coaching, motivation and training abilities
  • Thorough working knowledge of MSD / GHS regulations and guidelines an asset
  • Computer skills (MS Office software)
